What's For Dinner?


Happy Tuesday!

I found a great recipe for cheesy chicken bake on Pinterest. Yes, I am becoming addicted to Pinterest! Y'all should have warned me it is highly addictive!

Anyway, I didn't have much time in the grocery store yesterday because I knew baby O was going to start getting upset because his lunch time was near. I had this recipe on my phone and since it doesn't take a lot of ingredients it was easy for me to grab it all really fast. The best part of this recipe is that everything cooks in the croc pot. You just throw all the ingredients in and walk away!

The recipe is so simple. And delicious!

Here is what you will need:

1 bag of frozen chicken tenderloins (2.5-3lbs)
1 can of black beans, drained and rinsed
1 can of corn, drained
1 can of rotel
1 8oz block of cream cheese (do not use fat free)





Directions:

Put frozen chicken in croc pot
Put cream cheese on top of chicken
Dump the black beans on top (don't forget to make sure they are drained and rinsed)
Dump in the drained corn
Dump in the rotel




Cook, covered for 6-8 hours. I went back to stir every couple of hours. Let it stand for 30 mins before you are ready to eat because it was a little soupy and this helped to thicken it up some.




This picture really doesn't do it justice. I promise it is delicious! I served it over rice and it was really good. Next time I make this I will use hot flavored rotel to give it some kick.



We had a lot leftover, since it was just the two of us eating. So tonight I will shred the chicken and put it in tortillas with some cheese and salsa to make burritos. You know I love me some mexican, so I can't wait to try it like this!
