Does Size Really Matter?







Is bigger always better?




I am talking about jewelry, specifically diamonds.

What did you think I was talking about?


Kim K. just got engaged and her engagement ring is 20.5 carats!!!!





HUGE!!!








Now, I have always been of fan of BIG jewelry......

But Kim's 2 million dollar, 20.5 carat ring........

Just **might** be....... TOO BIG.........

I can think of a lot of things to do with 2 million dollars.....

Sometimes, less, really IS  more.

Happy Memorial Day!!!

Happy Memorial Day Weekend!

So happy hubs has a 3 day break!

We have lots to do!

I am officially 34 weeks preggos!

Can you believe it?  

I am so excited about the arrival of baby boy, I could burst!!!

Which, by the way, I am so big, I just might do! 


Big plans this weekend! Well, not really, since I am getting to that uncomfortable stage, we are not going anywhere crazy exciting!

We are going to pick this up today!!





And we just may go here for lunch!




I am craving their Luau Salad.

Or we could end up going out for this...... 




I always crave Mexican......



I would really like to see this movie!!!!






We already saw this yesterday!





Funny! Not QUITE as funny as the first, but I definitely had fun seeing it! And it wasn't just because Mr. Copper is in it!



Last but not least, we have to get baby's nursery organized!!!


I am so excited!!!!

What's For Dinner?

Happy Thursday lovelies!

Sorry I have been MIA! 

I have been busy with baby showers, writing thank-you notes, organizing baby's things.... Not to mention, my low back hurts 24-7 now! That part has definitely slowed me down! But, I have not forgotten about you and I will be by your blogs catching up on reading soon!

I have a yummy, easy recipe to share!

I have been craving Mexican food like crazy lately (even more than I already did, which is scary). I found a recipe for Chile Relleno Casserole, and it is delicious! I have made it twice in the past week! It is that good!

Here is the recipe!



Ingredients

  • 2 (7 ounce) cans whole green chile peppers, drained (I use Ortega  brand)
  • 8 ounces Monterey Jack cheese, shredded
  • 8 ounces Longhorn or Cheddar cheese, shredded
  • 2 eggs, beaten
  • 1 (5 ounce) can evaporated milk
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk
  • 1 (8 ounce) can tomato sauce (Instead of tomato sauce, I used enchilada sauce. I like Old El Paso)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  2. Lay half of the chilies evenly in bottom of baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chilies. In a bowl, mix together the eggs, milk, and flour, and pour over the top of the chilies.
  3. Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes. Sprinkle with remaining Jack and Cheddar cheeses, and serve.

If you have any leftover, it re-heats perfectly!!

I am headed home today for my baby shower! I am so excited to see my friends and family, it has been months since I have been home!
